The winery is an old convent of the sixteenth century founded by the Trinitarian order. In 1608 he was delivered to the Reformed Order of the Barefoot Trinitarians, from where the name of the bodega arose, and whose monks he cared for years after years, despite reforms and natural disasters such as earthquakes.

The estate is divided into two heights, the winery and the vineyard field, located on the Cornisa del Tajo de Ronda, surrounded by three Natural Parks. The winery is an old 16th century convent. The Descalzos Viejos farm has an area of 16 hectares. At the rear of the building, there is a beautiful terraced garden with fruit trees and a water source. The vineyard is found in the lower part of the estate, between old olive trees and holm oaks.
A common dream
The project involved the recovery of the main building, gardens, orchards, ponds, fountains and the entire environment, reintegrating and consolidating all the original architectural and artistic elements that could be recovered. Surprising was the appearance of some frescoes on the main altar, where the deposits and barrels are located, which, hidden under numerous layers of lime, chips and damp, have miraculously survived. These frescoes reflect Santa Justa and Santa Rufina, and what less than to pay homage to them by creating two wines with their name "Iusta" and "Rufina".
The Serranía de Ronda presents a great diversity of microclimates, the winery works 10 hectares of vineyard spread over three farms:
Finca Descalzos Viejos: At about 650 m of altitude, it is characterized by low temperatures in winter and high temperatures in summer, little rainfall and a stony limestone soil with a loamy texture. The varieties are Cabernet Sauvignon, Syrah, Garnacha, Graciano, Petit Verdot and Merlot.
Finca Haza del Batán: At about 600 m of altitude, close to the Guadalevin river and with clay-loam soils. The varieties are Garnacha, Syrah and Chardonnay.
Finca Huerto del Mellizo: At about 600 m of altitude. This farm stands out for having a soil with a high clay content, providing ideal characteristics for the cultivation of Chardonnay.
