The Descalzos Viejos Winery, in Ronda, is an old convent from the 16th century, founded by the Trinitarian order, thanks to the Privilege of the Queen Juana I of Castile.
In 1608, it was handed over to the Reformed Order of Barefoot Trinitarians, who were forced, due to earthquakes, landslides, stone falls and humidity, to the city. Some Trinitarios remained in charge of the orchards and began to be known as the Descalzos Viejos, which gave rise to the name of the winery.

A common dream
The project involved the recovery of the main building, gardens, orchards, ponds, fountains and the entire environment, reintegrating and consolidating all the architectural and artistic elements originals capable of being recovered. Surprising was the appearance of some frescoes on the main altar, where the tanks and barrels are located, which, hidden under numerous layers of lime, chips and humidity, have miraculously survived. These frescoes reflect Santa Justa and Santa Rufina, and what less than paying tribute to them by creating two wines with their name "Iusta" and "Rufina".
