Vineyards in Extreme Altitudes and Continental Climate
The vineyards of the Pago de Almaraes winery are located at significant altitudes, ranging from 900 to 1,600 meters above sea level, under an arid continental climate that reaches temperatures up to 40ºC during the day and drops below 20ºC at night.
This thermal oscillation favors a daytime ripening accelerated by the heat and a nocturnal interruption by the cold, with the leaves of the vineyard protecting the grapes from the lowest temperatures. This process results in a gradual and extended aromatic and polyphenolic ripening over time, prolonging the harvest up to two months longer than usual in other regions.

The uniqueness of the Pago de Almaraes winery lies in its cave structure, which creates an internal microclimate that maintains a constant temperature of 17ºC and a relative humidity of 70 %throughout the year. In addition, the winery is equipped with a water spray system and fans that are connected to outdoor rooms, thus guaranteeing ideal climatic conditions for wine conservation.
