El suelo y el clima y es que estos dos solo coinciden en un lugar del mundo: Jerez.

El suelo es un factor clave que ayuda no solo en el crecimiento de los cultivos, sino en la obtención de la materia prima que tanto caracteriza a los vinos elaborados en esta zona de España.

El suelo albariza, es un suelo que sólo se da en esta parte del planeta, con  características determinadas que parecen especiales cuya capacidad de absorción de agua y una composición predominante de calizas ayuda a darle ese sabor característico a nuestras uvas.

El clima templado de la zona junto con el nivel de precipitaciones en torno a 600 cc./año es ideal, caluroso durante el verano y con cierta influencia  del cercano Océano Atlántico, tanto por los vientos de poniente en verano, como por los frecuentes rocíos de nuestras aguas, siendo un aporte moderado pero continuo de líquido para la planta, ayudando a todos los procesos de nutrición y síntesis de las uvas de la variedad Palomino.
