Sweet Sherry Wines are all those obtained from grape musts.

They come from very ripe grapes or grapes that have received a lot of sun exposure, in general these belong to the Pedro Ximénez or Moscatel varieties.

For those who do not know the meaning, we refer to must, the juice of the grape, which may include various elements of it such as skin and seeds.

This must is prepared with a great richness in sugars as a result of the raisining process, which gives it the characteristics of sweet sherry wine, these are fermented only partially, in order to preserve most of the original sweetness, which is why wine alcohol is added once they begin to ferment.

Then these sweet sherry wines tend to age and after direct contact with oxygen in the air, they acquire an intense mahogany color and a much denser appearance than other wines also produced in the area.

As you will see, sweet sherry wine made from muscatel grapes has a certain merit in the market.

And this is due to its excellent flavor, but it is also essential to note that the category of Muscatel is very old and is even one of the most complex and spectacular wines that can be tasted.

On the other hand, among the sweet Jerez wines, we find one made with Pedro Ximénez, and it is just that, the peculiarity of its elaboration and aging that allows it to concentrate its acidity balancing the high sugar content.

These wines are generally quite dense, something that does not change as the years go by, on the contrary, it becomes a little darker each time, to the point that it acquires an aspect when aged, quite similar to that of a motor oil.
