Coming from the complete fermentation of palomino grape musts, the olorosos are "vocational" wines; the special structure that they show from the beginning advises tasters to classify them for oxidative aging.


In a range that goes from light amber to intense mahogany, depending on its aging, it is a dry, pungent wine, with a lot of body and character, with a persistence of walnut and balsamic plants, with touches of pine forest and marsh. Almost secret, of low production, given the generosity of the flower veil that marks the fin in Chiclana. It should be taken at a higher temperature than the sweet. Recommended between 16 and 18 degrees, it is an excellent wine for the table, with red meat and sophisticated tapas
