Mechanical collection by vibration through umbrellas. Maximum extraction four hours after harvesting using a centrifuge. Storage in stainless steel tanks with nitrogen atmosphere. Acidity 0.12º.
Light green, bright. Vegetable aromas of fresh grass, fruits such as green apples and vegetables such as tomatoes. Notes of dried fruits such as almonds and walnuts. In the mouth it is fluid, with a slight bitterness, very balanced and a certain final astringency.
