At the end of the 18th century, the bustle of the streets of Jerez de la Frontera testifies to the dynamism of the city, which is progressing thanks to the export of its famous wines. Juan Sánchez de la Torre, is the one who in 1781 laid the foundations for the Sánchez Romate Hermanos society, one of the few wineries that is still in the hands of Jerez owners.
Dark mahogany, clean and radiant, it is a vinegar made with the varieties palomino (85%) and pedro ximénez (15%). It has a minimum aging time of three years. Its characteristic and intense acetic aroma is reminiscent of the old fragrant and its mild and pleasant taste has moderately sweet notes with traces of fragrant wines and oak wood.
