Antonio Barbadillo Mateos is part of the Barbadillo family, he started his personal project together with his wife and children in 2010 with the aim of making the traditional wines of Andalusia known and valued, selecting and bottling the best of different Denominations, being faithful to the characteristics of each one of them.
The personal project of Antonio Barbadillo Mateos that began with the "sacas" of Manzanilla AB is gradually completed with other types of Sherry wines such as this very old Amontillado, the result of the collaboration with Bodegas Yuste. It is a selection made by Antonio Barbadillo himself of some old amontillado boots from the Solera del Conde Aldama, possibly one of the oldest amontillados in the area, complex, sharp, and not very accessible to sensitive palates.
Amontillado very old made with the Palomino variety, and aged for more than 60 years by means of the criaderas and soleras system and with very few sacks that make the wine concentrate, progressively increasing the degree of alcohol.
Pairings: All kinds of meats, grilled vegetables, oriental cuisine, cheese.
Tasting note: Bright amber color, possibly somewhat cloudy, with a very intense, saline nose, with notes of dried fruits, noble woods, and cabinetmaking. In the mouth it is tremendously dry, powerful, salty, broad, voluminous, endless.
