Oloroso is a wine made from palomino grapes. The special structure that it demonstrates at an initial tasting destines it for oxidative ageing. For this reason alcohol is added to 17°, thus preventing the development of the veil of flor and allowing the wine to age while exposed to oxygen. The result is a wine both structured and complex.

 Vineyards and Harvest

 The vineyards belong to the Superior area of ​​Jerez, specifically to Gibalbín and Santa Lucía. In a surface of 400 Hectares and an antiquity of 30 years, the pruning is of double cord and to the being vineyards located in the interior it has a specific microclimate, so that the grape has a good maturation.

 

His harvest is manual in bulk and takes place in August for 17 days.

 

Breeding and Processing

The aging of this wine is carried out in American oak Jerez boots and is oxidative in nature. During the fermentation of palomino grape must, the most robust wines are selected and topped with wine alcohol up to 18% vol. This fortified wine called "sobretablas" is destined to aging in Jerez's boots, usually 500 liters.

 Tasting Note

The color of this wine is a mahogany tone, with hints of noble woods and nuts, unctuous and dry on the palate.

 Food Pairing and Consumption

 Wine to drink as an aperitif and to accompany any snack: dry fruits or dried fish or salted: mojama, anchovies, herring ... The connoisseurs like to accompany it with game dishes, such as stewed partridges, pularda breast stuffed with foie gras with pine nuts, pigeon with Brussels sprouts, pickled partridge salad, mushrooms.

 If you prefer red meat is a wine that matches perfectly with these, such as: Iberian sirloin, beef, beef tenderloin with baked potatoes and the grill of the garden, duck magret.

 And if you want a typical dish from our area: braised oxtail, meatballs al oloroso or the traditional Jerezana Berza.
