The Xixarito range of Bodegas Barón stands out for encompassing the middle-aged wines of this historic winery.

 

Coming from the complete fermentation of palomino grape musts, this Amontillado is a unique wine, the result of the fusion of two types of aging, the biological and the oxidative. Its particular aging process begins, as in the case of manzanillas, with an initial phase under a velo de flor; Throughout the first years in the criaderas, the wine acquired sharp notes and accentuated its dry palate. From a certain moment, the disappearance of the flower causes a second phase of oxidative aging, which will gradually darken the wine and give it concentration and complexity.

In a wine with an elegant topaz to amber color. Its aroma is subtle and delicate, with an ethereal base softened by aromas of nuts (hazelnuts), and vegetables reminiscent of aromatic herbs and black tobacco.

It presents a pleasant entry into the mouth and a balanced acidity; Its development is complex and suggestive, highlighting a dry finish and a prolonged aftertaste in which the notes of dried fruit and aged wood return.

Pairing: Almonds, Morcón and Iberian Ham, grilled asparagus, artichoke cream, sautéed smoked mushrooms and white meat (salmon, herring, oven-baked lamb and rice with rabbit.

Conservation and recommendations: The boxes should be stored in a cool and dry place. Serve at a temperature between 12-15º.

You can tell this when serving it: This label designed by Estudio Macoma tells the story of the former owner of the winery, José Rodríguez Jiménez, nicknamed ‘Xíxaro’, because eggs with peas are one of their most common foods in childhood. It includes a dedication for being "a forerunner of the new Bodegas Barón" and a poem. The illustration is a review of his life, presided over by an elephant, his favorite animal, whose eye is copied from his, like the hand that holds a catavinos. They include some scenes from his life, such as the one in which he appears dressed as a Scotsman with his wife Mercedes. It is completed by details that evoke wineries and Sanlúcar: a prawn, schooners, the virgin of Rocio ... The winery's commitment to such a daring image cost some criticism at first, but many now imitate the style of its labels. .
