DV Aires Wine
DV Aires is a Andalusian red wine that is powerful and fleshy, with a label that refers to bullfighting, specifically to the figure of the Firefighter Torero. The label was commissioned by the winery to the internationally renowned visual artist and photographer from Ronda Carlos Aires, hence the name of the wine. This wine belongs to the emerging D.O. Sierras de Málaga and is a true reflection of the tradition and art of the region.
Characteristics:
- Grapes: Petit Verdot and Garnacha.
- Vineyard: Finca Descalzos Viejos, Ronda.
- Soil: Clay loam, with a high content of limestone, which gives it minerality.
- Production: Alcoholic fermentation in steel tanks stainless.
- Aging: 16 months in 500 liter French oak barrels.
- Alcoholic content: 15% vol.
Tasting notes:
- View: cherry cherry color with reddish edges.
- Nose: Intense and deep, with notes of ripe black fruit, spices, balsamic touches and minerals.
- Path: Powerful and fleshy, with tannins present but round. Long and persistent finish.
Recommendations:
DV Aires is an ideal wine to accompany red meats, game, stews and cured cheeses. It is recommended to decant it before serving.
Curiosities:
The wine label is the work of the visual artist and photographer from Ronda Carlos Aires, and pays homage to the bullfighting tradition of Ronda.
DV Aires is considered by the winery to be a wine for storage with great aging potential.
When serving it, it is interesting to note that the Descalzos Viejos winery is located in a convent of former Trinitarian monks (The Reformed Order of the Trinitarians Barefoot). Due to landslides, the convent had to be abandoned, but the oldest monks remained there in charge of the orchards. This is where the name of the winery came from, Descalzos Viejos.
The current owners, Paco and Flavio, both architects, told us that during the restoration of the convent, some frescoes were discovered on the main altar of Santa Justa and Santa Rufina, to whom they also dedicated some wines that you can find on our website.
DV Aires has a limited production of 3,920 bottles, making it a unique jewel of the region.
