At the moment of the desired maturity, the grapes are harvested manually, making a first selection of bunches in the vineyard. Once in the cellar, the grapes are placed in boxes in a refrigerated truck where the temperature is lowered to about 3-4ºC for 24 hours. Next, the grapes pass through a selection table. After this, the destemmer follows where the scrap is removed. The whole grape is transferred to a temperature controlled tank and the fermentation is allowed to start spontaneously.
During the days of fermentation, the deposit is pummeling (shaken) daily to remove the skins. After 25 days of fermentation the wine is uncovered and pressed, and transferred to an oloroso boot where it is hermetically closed to avoid the veil of flower and oxidation and in this boot will proceed to perform the malolactic fermentation or second fermentation. This wine has an aging in oloroso boot of 10 months and 4 months of aging in the bottle.
The tasting note tells us that it is amber colored with golden reflections, it is clean and with a very dense tear that descends through the glass. In Nose it is sweet, has tropical memories and with a countersunk and roasted background, a marked subtlety of its passage through a fragrant boot. We also have a mineral background, a reminder of that albariza that shelters your plants. In the mouth it has a nice and voracious entrance, in which you can see that dense glycerin, followed by a pronounced sapidity, typical of aged palomino, and after that sip, we try again and see the breadth, length of the wine that surrounds us. mouth.
Tell this when serving: On the label we can see two monkeys.
