With the aim of recovering the native Tintilla de Rota variety, this particular wine was born; this is the fourth project of Bodegas Forlong in El Puerto de Santa María (Cádiz).
Following the philosophy of the owners of the winery, Rocío and Alejandro, to work always innovating and in a different way, they then decide to make winemaking in clay jars, and thus they create a different wine, visually with much colour, and although it gives the Impression of being very heavy, the high acidity it contains causes it to counteract. On the other hand, the type of land where the grape is grown (also known as Albariza) makes it very sweet, being a long wine to savour.
You can tell this while serving: A curious factor as well as interesting, to tell while this wine is served is that the grape Tintilla de Rota, an autochthonous variety of the area, already existed on the estate along with the rest of grapes, but gave no value at first, to the point that the first year until they gave it away. Alejandro confesses to me with laughter that "once we discovered its potential we almost tossed our hair thinking that we had been giving it away". Being an autochthonous variety they wanted to reflect it in some way in the etiquette, reason why they chose an autochthonous animal like the chameleon that needs lands easy to move air to bury their eggs. If we delve deeper into the image, we can find the simile between the long and coiled tongue as a reflection of the adventure of Rocío and Alejandro to "wrap the rug to the head" in order to produce a quality ecological wine with Tintilla de Rota.
