Unknown to many, Galán Portero is one of those family wineries with great simplicity, which puts heart into what it does, showing great enthusiasm for its work and distilling purity in its elaboration, exclusive to Pedro Ximénez wines.
In visual phase, it is a medium robe wine for a PX, with mahogany tones, and clean although not excessively bright. Good tear and very slow to fall as expected due to the high density of sugar, well above the 272 grams per liter required by the regulations as a minimum.

In the olfactory phase it is of medium-high intensity, with aromas of honey and raisins, but with a starring appearance of hints of caramelization, the typical smell of sky bacon, toasted sugar.

In the background, a fresh, vegetal sensation typical of the rapón (green part of the bunch) that is pressed together with the raisins and that is an aromatic testimony of the authenticity of this genuine production of sweet raisin wines.

On the palate, it is broad, unctuous on the palate, with a large volume typical of a 100% PX, without edges, with a sweetness that is not cloying and that is lightened by the freshness of the acidity and bitterness of the vegetable finish, necessary for its balance. Retronasal to toasted yolk, honey and dates. The fact that it is from the 2016 vintage has given it a significant time of rest in the tank and later in the bottle that integrates the added alcohol making it less aggressive and that does not bother the nose or the mouth, great success.

A wine that due to its high concentration of sugar is a dessert or can be combined with other desserts, fresh fruit, cheeses, at a temperature of 10-12 degrees.
