Alfonso is a dry oloroso with a minimum of 8 years in American oak casks following the traditional system of criaderas and solera.

A first gentle pressing is applied to the Palomino grapes to obtain the Yema must, the first and most delicate of the musts.After fermentation, classification and fortification (addition of wine alcohol up to 18% vol.) The wine passes to Alfonso's solera where it will age for an average time of 8 years.
