La Parrilla Alta is an old olive grove farm located in the municipality of San José del Valle in the province of Cádiz.
Hacienda La Parrilla Alta is located in the heart of the Province of Cádiz, bordering the Los Alcornocales Natural Park. An extensive farm of 400 hectares dedicated to the olive tree, the Iberian pig and of course the wine, where they are also advised by the Sanlucan oenologist Ramiro Ibáñez.
Arroyo Alquitón is made with Tintilla de Rota, planted on albariza soil in the vineyards that surround the Hacienda, and is the great wine of the property. More than 12 months of aging in French oak barrels give a lot of character to an already very expressive and well-cared Tintilla.
Manual harvest from Tintilla de Rota's own vineyards. Destemmed and vatted by hand. Cold maceration for 6-7 days. Fermentation in stainless steel tanks and subsequent malolactic fermentation in barrels. Aging in French oak barrels for 12 months. Lightly filtered and bottled without clarifying or stabilizing.
Pairings: Red meats, country stews, game meats, cured cheese.
Tasting note: Dark red color with violet reflections, great density, clean and bright. On the nose it is frank, with notes of black fruit, blackberries, blasamic notes, and spices. Fresh and full mouth, with good acidity and a very long aftertaste.
