Bodegas Luis Perez is a family project that arose in the year 2002 at the hands of the professor at the University of Cádiz and former Director of Research at Domecq, Luis Perez Rodríguez and his family, headed by his son, the winemaker Luis Willy Perez .
Elaboration
The Petit Verdot from Bodegas Luis Pérez is the personal commitment as Signature Wine of winemaker Willy Pérez. A Petit Verdot variety of French origin perfectly adapted to more southern and warmer areas since the Marquis of Griñon and Prince Alfonso de Honenlohe introduced it to their estates back in the 80s.To that add the exclusivealbariza soil of the Jerez area, where the Vistahermosa estate of Bodegas Luis Pérez and a treatment in the vineyard, taking care almost cluster by cluster. Thus the wine is intense on all four sides and we are facing one of the best Andalusian reds on the market.
A pre-fermentation maceration is carried out at 5°C with carbonated pellets, to continue with a fermentation at a controlled temperature from 15°C to 28°C, lasting the maceration 18 days.Malolactic fermentation and aging takes place in new French oak barrels for 12 months.
Features:
It is characterized by a deepcherry color, very intense and lively. On the nose it is of great complexity and is expressed insuch unusual aromas like stone, earth, truffle and inkall wrapped in subtle blackberry notes. In the mouth it is powerful and complex, with amazing persistence and very ripe tannin.
Tasting:
Perfect to pair with cured sheep and goat cheeses. Wood-fired lamb and goat meats. Interesting pairing with grilled duck magret. Madrid-style tripe and bolillo.
