The Petit Verdot of Bodegas Luis Pérez is the personal commitment as Signature Wine of the winemaker Willy Pérez.
A Petit Verdot variety of French origin, perfectly adapted to more southern and warmer areas since the Marqués de Griñon and Prince Alfonso de Honenlohe introduced it to their farms in the 80s.
Add to that the exclusive albariza soil from the Jerez region, where the Vistahermosa estate of Bodegas Luis Pérez is located, and a vineyard treatment taking care of almost bunch by bunch. Thus the wine is intense on all four sides and we are facing one of the best Andalusian reds on the market.
A pre-fermentation maceration is carried out at 5 ° C with carbonic pellets, to continue with a fermentation at a controlled temperature from 15 ° C to 28 ° C, the maceration lasting 18 days. The malolactic fermentation and aging takes place in new French oak barrels for 12 months.
It is characterized by a deep cherry color, very intense and lively. The nose is highly complex and is expressed in aromas as rare as stone, earth, truffle and ink, all wrapped in subtle notes of blackberries. On the palate it is powerful and complex, with amazing persistence and very ripe tannins.
Perfect to pair with cured sheep and goat cheeses. Lamb and kid meats in a wood-fired oven. The pairing with grilled duck breast is interesting. Madrid-style tripe and bolillo.
