Taking as a starting point the base wine from the Palomino grape, it is topped with vinous alcohol up to 18º of alcoholic volume. From that moment on, it is transferred to American oak casks (500 liters) where oxidative aging takes place, that is, its aging in constant contact with air, exposed at all times to the slow action of oxygen in the system of soleras and criaderas.
The slow loss of water through the walls of the wood during the 15 years in which it remains in aging, favors a continuous concentration process, which makes the wine acquire the structure and complexity typical of Oloroso.
Undoubtedly, this winery takes good care of its wines as a good warehouseman that was in another era, when it sold the wines to the best exporting houses, now it is noticeable that we are facing an exceptional oloroso, the first among equals, as the motto of the winery, with a point of complexity due to the concentration that the wine undergoes during its aging period, which leads it to increase its degree of alcohol, but which is perfectly balanced. A delight of wine at a more than affordable price.
To the senses: mahogany, warm, persistent, structured. For El Maestro, it harmonizes with red meat with an intense flavor.

Tell this when serving: The winery was founded in 1830 by José Antonio Sierra, who made boots for González Byass. At that time the wineries were only in the hands of the great families, so it was unthinkable that a worker would have his own winery. But José Antonio persisted and managed to make his own wine. For a long time he sold his warehouse wines to large houses to make his wine. Unfortunately many of his vines were sold in the 1930s and today they get their fruit from the cooperative, but they have contracts to get the grapes from the original plots. El Maestro Sierra is characterized by its traditional methods and today it is one of the wineries with the oldest stock of wines in the Jerez region.
