This Palo Cortado from Bodegas Maestro Sierra, although it is included in the range of Old Wines of the winery, with the same wide bottle format, is, however, a wine that is around 20 years of aging, which are quite a few but it is far from the rest of the range that exceed 50 and 60. Even so, it is still a rarity because it is scarce, and of an exquisiteness and finesse due to the high quality with which this magnificent winery has us accustomed.
Made from a 100% Palomino fine wine, with an initial and small biological aging under a veil of flower and a later and longer oxidative aging during the rest of its life. Low production of about 300 bottles per year
Pairings: Like the oloroso, they are vinso to be enjoyed alone, with just a few nuts, or as a dessert.
Tasting note: Light mahogany, amber, bright with reddish reflections. Delicate and elegant aromas, with hints of candied fruit, dried fruits, varnishes and roasted woods. On the palate it is dry, voluminous, enveloping, very long and very balanced.
