This Palo Cortado wine from Bodegas Maestro Sierra although it is included in the winery's range of Old Wines, with the same wide bottle format, it is, however, a wine that is around the 20 years of aging, which is quite a lot but it is far from the rest of the range that exceeds 50 and 60. Even so, it is still a rarity because it is scarce, and of exquisiteness and finesse because of the very high quality with which this magnificent winery has accustomed us.
Crafting
Made from a100% Palomino fine wine, with an initial and small biological aging under a veil of flor and a subsequent and longer oxidative aging during the rest of its life.Small production of about 300 bottles a year.
Pairings:
Like the Oloroso, they are wines to enjoy alone, with just a few nuts, or as a dessert.
Tasting note:
Light mahogany, amber, bright with reddish reflections. Delicate and elegant aromas, with hints of candied fruit, dried fruits, varnishes and toasted woods. In the mouth it is dry, voluminous, enveloping, very long and very balanced.
