The vinification process of the Pedro Ximénez grape, which will give its name to this wine, begins with the soleo of the grape to achieve its raisin, the increase in sugar content and changes in its chemical, physical and sensorial nature.

 

The most economical range of Bodegas El Maestro Sierra includes this Pedro Ximénez of about five years of medium aging with an excellent value for money within its category. It is sweet but without being cloying, which makes it very versatile at the table, not only as a dessert wine but also with appetizers such as blue cheeses or foie.

Made 100% with the Pedro Ximénez variety, the grapes are exposed to the sun once harvested for dehydration and raisining. Converted into raisins, the grapes are ground and fermented in steel tanks.

Once the must is extracted and in order to stop its fermentation, wine alcohol is added until it reaches approximately 10º to stabilize it. During the following autumn and winter, the wine will be clarifying. Next, we proceed to the "desliado", that is to say, to the cleaning of sediments.

It leads again, this time up to 15º; and from there it goes to oak wood casks where it will enjoy an oxidative aging process through the soleras and criaderas system for 5 years.

Pairings: Foie, blue cheeses and sweet desserts. Dark chocolate.

Tasting note: Dark mahogany color with iodized rims, it is tremendously intense on the nose, where the notes of grape or prune, candied fruit, toffee, figs stand out. On the palate it is silky, velvety, dense, unctuous, and with a Slightly bitter finish with hints of coffee beans.
