PREPARATION AND AGING
The entire collection of boots is divided into 4 breeders. For the first 6 to 8 years, this hearth underwent biological aging under the yeast or and the rest remained exposed to oxygen.
Over time, evaporation has made the wine more concentrated and more complex.

TASTING NOTE
Visual phase: Amber topaz of great brilliance complemented by broad iodized rims.
Olfactory phase: Complex aromas of fine wood and dried fruits such as hazelnut, highly evolved due to its long aging.
Tasting phase: In the mouth where this great wine is finished, powerful and very structured, which is tasty and somewhat bitter, which gives it a lot of elegance.
CONSUMPTION RECOMMENDATION
Pairing: Tasty fish stews and quality sausages such as morcón, loin and Iberian ham, as well as combining ideally with cured cheeses and white meats.
Serving temperature: Consume preferably at 12ºC / 53ºF
