The truly unique character of Coquinero is the result of its inheritance from a biological aging process, with the delicate character of a long-aged fine wine.

 

An emblematic brand of the historic Osborne Wineries founded in the 18th century in El Puerto de Santa María. Fino Coquinero is currently a lightly amontillado fine wine, hence its alcohol content reaches 17% vol, with very particular notes of biological aging, that pungent touch that characterizes fine wine, together with certain already oxidative memories of its aging when it goes. losing the veil of flower, notes of fine woods, vanilla, without becoming an amontillado. A very tasty wine rich in nuances.

PREPARATION AND AGING

Wine of the Palomino Fino variety, from the best albariza vineyards in Pago de Balbaina. The must ferments in stainless steel tanks and is topped at 15% vol by adding alcohol to start a period of biological aging for 4-5 years. Gradually, and reducing the number of sacks and sprays, the wine loses its veil of flower, and for 3 or 4 more years the alcoholic degree increases slightly due to concentration and evaporation of water. Finally after 7-8 years we have a slightly amontillado fine. The entire collection of boots is divided into soleras and 5 criaderas

TASTING'S NOTES

Light golden color, clean and very bright. Intense, fresh, sharp nose, highlighting aromas of green apple and notes of nuts such as hazelnut. On the palate it is very dry, powerful, broad with a good amontilla structure and a long, slightly bitter finish.

CONSUMPTION RECOMMENDATION

Pairing: A great wine to drink with tapas, especially with cured cheeses. Delicious with any type of seafood.

Serving temperature: 8-12ºC.
