For the Almaraes winery, making wine is like following a recipe for a dish. As Emilio, the winery's commercial director says: “It's a completely artisan wine, and even by using the same ingredients, the ‘recipe’ can vary in nuances from one vintage to another, because it doesn’t rain the same every year and neither do we have the same heat, so the ‘recipe’ is adapted according to the quality of the grapes. In this way the ‘recipe' is adjusted every year.
A curious fact about Almaraes is that it started as a 100% Syrah a single-variety wine, which later evolved to a blend of Merlot, Tempranillo, Cabernet Sauvignon and Syrah.
You can tell share this while serving the wine: One of the main objectives of the winery is to recover the ancestral traditions and old ways of Granada, hence the name of the wine. Almara is an Arabic word referring to the needle used to sew esparto grass.
