The Pago de Almaraes winery is located in the heart of the Guadix region and has been designed rewarding personal conception in the design and the polychrome of the nature that surrounds it. The work captures from the first moment the intense luminosity of the area and the difference of the interior spaces creating a play of light-dark that explodes in an unrepeatable way.
These are vineyards high above sea level (from 900m to 1,600m), with a very dry continental climate, affected by strong day and night temperature changes. This contrast favors a slow and escalating aromatic and polyphenolic maturation over time, thus obtaining highly complex wines.
For the aging of their wines they use various oak trees, among them American, French and some Central European. All of them have an average useful life of 5 years, which is gradually renewed every year.
The aging room has a park of 400 barrels that is kept in clay caves with constant and controlled temperature and humidity throughout the year. For aging in the bottle they use a heated and humidified room with nebulizers.
It is a Red wine with Syrah monovarietal aging whose harvest is carried out manually in boxes of 15 kg, double selection, the grapes rest in cold chambers. It is aged for 4 months in oak in natural clay caves, which provide a constant temperature for the good refining of the wine.
It is a perfect wine for all kinds of meats, Iberian sausages, stews, semi-cured cheeses
Tasting notes: Dark cherry color with a marked violet rim. Sweet nose of black fruit with mineral hints of chalk, Indian ink and black olive. In the mouth it is intense, meaty and powerful. With medium persistence that makes it a good companion to lightly seasoned dishes and a medium-strength flavor.
Tell this when serving it: The label has been made in recognition of the trajectory of a great Granada bullfighter such as “Pedro Chicote” and for this reason Pedro Jiménez, famous Granada-born piintor, was commissioned to make a label to recognize his trajectory, a label that accompanies the harmony of a soft and easy wine on the palate but with an intense aroma of red fruits.
Pedro Jimenez immediately understood the purpose of said label and how it should be the same; For this and to obtain the result, he decided to try the wine first to serve as inspiration, resulting in a spectacular design.
