Indalia Syrah is a monovarietal made 100% with Syrah and is cultivated under the premises of biodynamic viticulture (viticulture that is not only dedicated to make a type of wine, but also a philosophy of life in which there is a combination of science, work and natural self-sustainability in a full connection between land and space), from certified vineyards with the seal of the Andalusian Committee of Ecological Agriculture.
The harvest is done manually and at night, so that the grapes suffer as little as possible the large temperatures differences that occur in Almeria, from which these wines come, specifically located in a farm called "Las Lomillas" (Padules).
The winery stands out for the way in which they carry out the whole process of winemaking, called by gravity, divided into four plants at different heights and in which the different stages, selection, grinding, fermentation and bottling are located, going from one to another by gravity.
You can tell this while serving: The label reflects the traditional field work with mules due to the rugged terrain where the vines are, landscapes of large ravines, pits and slopes.
