Cream El Trovador is a sweet wine, from Chiclana de la Frontera, made from the mixture of an Oloroso and Moscatel wine, unlike Cream from other areas such as Jerez or Sanlúcar, which are usually made with Oloroso and Pedro Ximénez wine. The presence of at least 20% of the Moscatel grape greatly marks the character of the wine due to the intensity of its varietal aroma, providing silkiness and density in the glass. Bodegas Primitivo Collantes thus maintains this historic house brand within the range of generous wines from Marco de Jerez.
Made by nodding or mixing dry oloroso and Moscatel wines, in a ratio of approximately 80-20, without exceeding 115g / l of residual sugar. After homogenization, the wine remains in American oak casks for a brief aging until bottling.
Pairings Foie, desserts, blue cheeses, mushroom risotto, truffle.
Tasting note Dark mahogany color, dense and with abundant tears. Medium intensity nose, sweet, with outstanding notes of muscat, candied fruit, dried apricots. On the palate it is silky, very broad, round, sweet and with a medium persistence finish.
