This is one of the stories I like to hear when I visit a winery with such a long history as Salado, located in Umbrete, a town belonging to the Aljarafe region of Seville and well known for its must.
Having said that, Rafael tells me the story of Umbretum... "In 2006, at the presentation of the Umbrete must day in the house of the province in February, my father Curro Salado, in front of the mayor, the president of the council and the media present there said the following: "Gentlemen, this year we will toast with a Sevillian cava! The next day all the media echoed the news and seeing the repercussions it had had, he came to my house and said: "boy, I have said this and this must be complied with, so let's get to work and have a cava ready for this Christmas".
He tells us this when he serves it: Umbretum is made from a grape native to Seville, Garrido Fino, and is the only sparkling wine in the world made from this variety. The name is a tribute to the people (it is the name the people had in Roman times) as the winery cannot be understood without the people or the people without the must, which has given and still gives food to many families.
