Bodegas Sancha Pérez is the project of a Sevillian businessman who loves Cadiz. Ramón is an industrial engineer who, with the experience that the years have given him, has decided to make his life's dream come true, to create an exciting project, a "world of experiences" interacting with nature, respecting it in every way and participating in the natural cycle of life.
Sancha Pérez Merlot - Petit Verdot is a red wine. It is a wine from Cadiz. This organic wine is made with the Merlot and Petit Verdot varieties.
One of the most cultivated varieties in this property is the Petit Verdot, which in spite of being a French grape from the Bordeaux area, has adapted like no other to the southern area of Andalusia, as it is wonderfully suited to the climate of this area, which is very hot and very sunny in summer. Using this Petit Verdot variety as a base, it produces 3 wines, one monovarietal and two assemblages with other varieties.
He tells this when serving it: His agriculture is totally ecological, to the point of not only sticking to the vine but also cultivating fruit trees (plums) and varieties of aromatic plants (lavender, rosemary, laurel, thyme,...) which are very beneficial for the area due to their pollinating action and immensely positive for the vine, since these insects (such as ladybugs) attracted by these plants, fight possible diseases without the need to add chemical insecticides or fungicides. In other words, they do a favour to the nature of the area by reinforcing its biodiversity, while respecting the essence of the wine, its naturalness.
Organic production begins with clay soils and sea winds that bring saline touches to the wines. As a curiosity, we can say that after the harvest, the clusters of grapes spend 24 hours in a cold room at 5º so that the grapes, after destemming, arrive fresh and at the optimum temperature for fermentation.
