A great opportunity to taste a wine at its best. Fresh out of its barrel, this Fino en Rama from the Santa Petronila Family Reserve has not been clarified, filtered, and has no preservatives. Precisely for this reason it bears the label of "en rama", that is, from the boot directly to the bottle
The Viña Santa Petronila winery located in the heart of Marco del Jerez, and in the middle of the vineyard, in the Pago de Macharnudo, offers us this Fino en Rama, obviously made from its own Palomino Fino vines planted on the white Albariza soil. Artisan elaboration, with bags and sprinkles using the canoe, a traditional utensil used in the Marco. Very very limited productions of this natural fine that is presented unfiltered, which can cause certain differences to be noticed from one harvest to another, or with some natural turbidity. This is a Fino en Rama.
Palomino Fino vineyard planted more than 30 years ago on albariza land in Pago de Macharnudo, where the winery is also located. Manual harvest, fermentation in small stainless steel tanks, headed at 15% vol and very long biological aging under a veil of flower for 9-10 years, at which point it begins to turn slightly brown. Small bags of about 800 bottles per year. Bottled in branch in 50 cl format.
Pairings: Appetizers, Iberian ham, fried fish, seafood stews.
Tasting note: Old golden yellow color, with slight natural turbidity. Very intense and fragrant nose, hints of fresh apple along with almond notes. Clear memories of fresh yeast, bakery. On the palate it is dry, very expressive and fresh on the palate, with salty touches. Correct acidity and final in which freshness and a slight bitterness stand out again.
