The smallest Jerez Winery in the world. It is an artisan winery, where the sacks have been made "en rama"; unfiltered, unclear, ...
Vineyard and Winery in the Macharnudo Bajo area, natural fermentation and aging of the wine in oak sherry casks and in the vineyard itself.
Marismas de Santa Petronila is the suggestive and very Cadiz name of this white wine produced by the one known as "the smallest winery in Jerez" Viña Santa Petronila. Winery and vineyard, vineyard and winery, located in the heart of the Pago de Macharnudo Bajo albariza where their owners have about 17 Ha of vineyards, mainly from Palomino, and among them old vines of Palomino 84, an old clone somewhat different from the one used for do the finesse. With these old vines, cared for to the maximum and artisanal work they make this white wine, of very limited production. It is therefore a doubly white wine, white from Albariza and white from Palomino.
Coming from the oldest vineyard on the estate, a Palomino 84 clone that is older than the one currently used for most of the fines, and less productive but of great quality. Albariza soil in the Macharnudo Bajo area where the farm is located. Manual harvest and fermentation in 500 L sherry casks. Once the fermentation is finished, the wine rests in contact with its fine lees for a few months before being bottled.
Pairings: Appetizers, salads, seafood, seafood rice.
Tasting note: Pale yellow, somewhat straw-colored with bright golden reflections. A predominantly fruity nose, very fresh, with notes of white fruit, apple. Citrus notes also stand out. On the palate it is silky, with good structure, broad in the mouth and correct acidity.
