Margarito y Amapolo wine is a wine of Cádiz, and more specifically from a family estate of 3,000 square meters located 500 meters from the monastery of La Cartuja de Jerez.
It is an author's wine created by the oenologist Santiago Jordi (president of the national association of oenologists) who curiously does not have his own winery. It is a Biodynamic wine.
Made from the Petit Verdot and Tintilla de Rota grape varieties, Santiago takes author's wine to heart and takes care of everything from controlling the vines, to making the wine, to designing the labels.
It is a red wine made from selected bunches of grapes harvested by hand and de-stemmed under the supervision of the oenologist himself. It is aged for 6 months in French oak barrels (75%) and American oak barrels (25%) before going on to be bottled without physical or chemical stabilisation, only stationary.
It is a ruby-coloured wine, elegant, with aromas reminiscent of black fruit and olives from the mill, combined with its own toasted notes such as smoke or ash.
Tell this when serving it: The name "Margarito y Amapolo" comes from the daisies and poppies that grow next to the vines, as Santiago Jordi is in favour of letting wild plants grow in the streets between the vines as a vegetal cover, which will bring nutrients, aroma and character to the land.
