Inocente is a unique fino, worth much more than it costs. It is a bargain if we take into account the pleasure it is capable of providing us. It originates from the mythical Macharnudo Alto estate. This estate is characterized by delivering intense and characterful, but at the same time very elegant, finos. This is Inocente, a long-aged fino (about ten years on average) of which two saca are made per year, capable of withstanding the passage of time like no other.

 

Fino Inocente: A Generous Wine from Jerez

Origin and Production
Fino Inocente is a generous wine produced by Bodega Valdespino in Jerez de la Frontera, under the D.O. Jerez designation. This winery is one of the oldest in the region, with a history dating back to the 13th century, when Don Alfonso Valdespino began cultivating vines and aging Jerez wines. Today, the winery belongs to the Estévez Group.

The Macharnudo Alto Vineyard

All the grapes used in Valdespino wines come from the Macharnudo Alto vineyard, a privileged location about 5 kilometers northeast of Jerez. At 135 meters above sea level, the albariza soil, typical of the area, plays a crucial role in the quality of the wines. This white, chalky soil is notable for its excellent water retention, promoting vine growth.

Vineyard Characteristics
Fino Inocente is made exclusively from Palomino Fino, sourced from vines over 25 years old in the renowned Macharnudo Alto vineyard. This grape variety is essential in creating high-quality fino wines.

Aging and Fermentation Process

Traditional Fermentation
The free-run juice ferments in 500-liter American oak barrels. Unlike other fino wines, which typically pass through 3 or 4 criaderas, Fino Inocente goes through 10 criaderas during its aging process, making it a unique wine in its category.

Aging Under Flor Yeast
The aging process under flor yeast, a distinctive method in Jerez wines, lasts a minimum of 8 years. This extended aging period is essential for developing the distinctive organoleptic characteristics of Fino Inocente, giving it complexity and elegance.
