Inocente is a unique fine, which is worth much more than it costs. He is a bargain when you consider the pleasure that he is able to provide us. It originates from the mythical Macharnudo Alto payment, of which Valdespino is its main owner. This payment is characterized by delivering intense fine wines with character, but at the same time very elegant. This is Inocente, a long-aged fine wine (about ten years on average) of which two bags are made a year, capable of withstanding the passage of time like no other.
Valdespino Fino Inocente is a fortified wine made by the Valdespino winery in Jerez de la Frontera, DO Jerez.
Valdespino is one of the oldest wineries in Jerez. The first member of the Valdespino family who was dedicated to the cultivation of the vine and the aging of Jerez wines was Don Alfonso Valdespino (13th century). Valdespino currently belongs to the Estévez Group.
Valdespino is a benchmark in the aging of Sherry wines, characterized by a traditional work during all the processes of making its wines.
All the grapes used to make the Valdespino pago wines come from the Macharnudo Alto estate, located about 5 kilometers northeast of Jerez, 135 meters above sea level, on albariza soil, typical of the area. The albariza soil is a calcareous white soil that is characterized by retaining water very well.
Valdespino Fino Inocente is a wine made with Palomino Fino from the famous Pago Macharnudo Alto, with vines over 25 years old.
The yolk must is fermented in 500-liter American oak casks, and it is aged under a veil in flower, going through 10 criaderas, something unusual for a fine since normally between 3 or 4 criaderas pass. Aging is a minimum of 8 years.
