White wine from 100% Pedro Ximenez grapes, overripe in the vine for 21 additional days to conventional harvesting. It is harvested by hand and transported in boxes of 15Kgs. to prevent damage to the fruit that is already evolved and less compact than the fresh grapes, but full of aromatic and sensory concentrations.
It is milled in soft winepress, with yields per ton of fresh grape of less than 600 liters of freshly pressed must. Immediately after grinding is introduced with its own skins in French oak barrels of between 225 and 300 liters, adding 30 liters each day to each barrel- hence it is called “Slow Fermentation”-, so that the yeast end up with all daily sugars and let the wine totally dry.
This total fermentation is particularly difficult in the variety Pedro Ximenez, known for its ability to maintain residual sugar.
The musts are kept on lees with soft battonage for six months in barrel, reaching a very complex structure. The overripe grapes with its concentration of aromas and flavors happen to be extraordinarily expressive and with different manifestations than any other wine, so that low yields per ton and the slowness of the process, acquire meaning.
VISUAL: In visual phase, clean, intense gold color with green iridescence and glycerical notes when the cup is rotated.
NOSE: The nose is marked by the French oak which is attenuated with notes of raisins and prunes. No oxidation, no stridencies, but harmony of elements. The aromatic characteristics are markedly own.
TASTE: In the palate surprises the nonexistent alcoholic sensation despite its 14 degrees. It is ample and attacks all sensitive perceptions, since from the beginning of acidity to the aftertaste of ripe fruit and wood, is persistent and full of plenitude.
