Our Ximénez Spínola Old Harvest is a sherry wine. This wine is made from the Pedro Ximénez grape, so it is a Pedro Ximénez wine from Jerez.
Grapes harvested by hand and exposed to the sun for 3 additional days to the regular harvest, it is carried to the winery in small boxes of no more than 15 kilos and fermented in barrel to reach 17 ° of natural alcohol and 45 grams of residual sugar.
It is incorporated to our 1964 Solera. 100% Pedro Ximenez Oxidative aging wine, “unique piece” around all Jerez frame. White variety that behaves “dry” with notes very similar to the “Palo Cortado” and “Oloroso” classics of the area, but with the subtlety and elegance of a grape, which has never been bottled with this elaboration and aging so marked.
Selected boots are assembled a year before being bottled, with a proportion widely dominated by notes of oxidative aging, but where oak edges are avoided, according to criteria of sensorial tasting, in order not to undermine the reached final equilibrium.
Tasting Notes
VISUAL: Dark amber wine, clean, shiny, glyceric and steely with apparent density
NOSE: Intense with aromas of woodwork, typical of the persistence of oak and oxidation.
TASTE: Full, round, balanced, with a mild aftertaste of natural sweetness which dissipates with high volatile degree typical of its old age. Intense in the mouth without being heavy, with smoky and soft roasted touches. Surprisingly dry without “planking” finely nutty. Ideal serving temperature 14º.
