Harvested by hand and collected in boxes of 10 kg. to prevent deterioration. Once cut, the grapes have to spend no less than 21 days exposed to the sun, which dehydrates them slowly and progressively, concentrating the wine fructose typical of its variety and providing the elegant natural sweetness, which differentiates the high quality Pedro Ximenez high, from others following different processes.
Since the levels of natural “sun-drying” dehydration are very high, for every ton of fresh grapes only 300 kg of raisined grapes are obtained, once in the winery, generate about 100 kg. Solid waste (skin, stick, seeds) and 200 liters of authentic raisin must.
This wine gets its alcohol naturally taking advantage of the less dehydrated grapes that reach the winery in the first days of sun-drying. Ferments in American oak barrels to reach 12% graduation at which it is held for three months in wood. It is bottled in the own accreditation of Ximenez-Spinola. It is clarified by natural decantation in barrel and goes directly to the bottle, after a soft cellulose filter, which helps not to lose its natural aromas and flavors.
VISUAL: In appearance shows an intense amber colour, clean and bright , with glyceric notes.
NOSE: On the nose, ripe grape, raisins, prunes with fermentative memories , without oxidation and almost no wood.
TASTE: Fresh with velvet entry; highly integrated acidity that makes easier the experience of tasting. Dates, figs and, of course, raisins. The paradigm of a fermented raisins juice.
