The winemaker's profession: an influential figure in the wine industry

The whole process of winemaking involves a series of steps in which the winemaker is involved at all times.

From the moment the grape variety is chosen to grow until it is marketed.

We could say that the human figure that most influences the final result of the wine is the winemaker.

The origin of the word oenology comes from the Greek οἶνος "wine" and λόγος "knowledge". Oenology is a profession that is responsible for overseeing the entire winemaking process and based on that development makes strategic decisions to obtain a final product with certain characteristics. Characteristics that include aroma, color, balance, among others.

For this reason, the university system in our country has a degree called Degree in Oenology.

In Spain, the first campus to offer a degree in oenology was the University of La Rioja.

The profession of oenologist in the past was not the same as what we know today.

Traditionally, the functions that this profession performs today were carried out by other professionals with technical training.

These professionals were chemists, biologists, agronomists and pharmacists.

In some cases the functions were carried out by the winemakers themselves or other figures within the winery who did not have certified technical training.

Today, with the improvement and refinement of the entire winemaking process, the figure of the winemaker with certified training has promoted the progress of the industry.

The winemaker, as we have already mentioned, is an integral professional.

In the world of viticulture, the winemaker must know and master a series of technical subjects.

All subjects are related to the entire winemaking process, such as: agricultural knowledge, biochemistry, organic chemistry, physics, mathematics, genetics, knowledge of economics, legal aspects of the sector.

In all these areas the professional is prepared to make decisions.

Decisions that will directly affect the quality and final characteristics of the wine.

The functions of a winemaker within the winery are as follows:

- Choosing the grape variety to be used for the cultivation of the vineyards: The characteristics of the land must be analyzed in order to choose the right grape variety to be used.

- He must create a work procedure, select the appropriate machinery and equipment.

- During cultivation he must take care of the vine, be attentive to irrigation, treatments, choice of the moment, conditions and optimal techniques for cultivation.

- Management and control of the entire winemaking process: choice of the most appropriate winemaking methods, procedures for obtaining the must, control of fermentations.

- Performing laboratory analyses such as: physical, chemical and microbiological analyses.

- Supervise the entire bottling process.

- Design wine aging and conservation techniques. Control and manage the evolution of the wines through technical tastings.

- Must carry out research work and wine studies for the improvement of the techniques used in winemaking.

- Making decisions regarding the sale and marketing of the product. As we can see, the profession carried out by the winemaker in the production of wine is fundamental.
