The cellar Cortijo Los Aguilares is placed to 3 miles of Ronda, county of Málaga (Andalucía), a historic and monumental city linked to the wine tradition in Andalusia for centuries. The farm is in essence a Holm-oak of 800 hectares where the Iberian pig is raised and the cereal and the olive is grown, in addition to the vineyard. It is more than 900m high in an environment worth admiring, with the Sierras de las Nieves and Grazalema in the background, here is formed a very special microclimate. It is a unique environment where a rich and wide variety of native trees such as the gall oak and the Pinsapo abound, as well as Holm-oak and Cork oak tree in the lower areas, where they cohabit with carob trees, olive trees and eucalyptus trees.

The Cortijo los Aguilares winery is located 5 km from Ronda, province of Málaga (Andalusia), a historic city, linked to the wine tradition in Andalusia. The farm is an 800 hectare holm oak grove in which Iberian pigs are raised and cereal and olive trees are grown. With a clay and limestone soil, favoring the resistance of the plant, since the soil retains moisture. At more than 900 m, in the Serranía de Ronda, with the influence of the Mediterranean Sea and the Atlantic Ocean, creating an ideal microclimate for the ripening of the grape and maintaining its acidity, due to the changes in temperature between day and night . With 6 hectares of vineyards, oriented to the North, we grow the Temparnillo and Pinot Noir varieties, and our hallmark, a bicentennial oak that has become one of the symbols of the Cortijo Los Aguilares Winery. The aging of the wine is carried out in French oak barrels, the best, in a room with controlled temperature and humidity.
