Origin and History
La Bodega Luis Pérez, are located in Jerez de la Frontera (Cádiz), in the Hacienda Vistahermosa, and were born in 2002 with the idea of revitalize the winemaking tradition of the Jerez region, where there are indications that confirm that the red grape arrived in these lands 3,000 years ago with the Phoenicians, until phylloxera from America devastated all the plantations. Typical Sherry wines, however, are only about 150 years old. In the past, the Tintilla grape predominated, which gave higher alcohol content to the wines.
Attention to every detail
The family starts a plantation of red varieties (Syrah, Petit Verdot, Merlot, Tempranillo and Cabernet Sauvignon) on a high hill in Pago del Corchuelo, whose privileged location allows the direct influx of maritime winds, thus achieving a perfect microclimate, which, together with the nature of the calcareous clay soil typical of the Jerez area, imbues the wines with excellent minerality.
Winemaking process
Once at Bodegas Luis Pérez, they explain to me how they carry out gravity vinification, with short macerations and at low temperatures to obtain a young-looking wine but with a surprising structure. The selection of barrels is very important throughout the process, since depending on the variety, the cooperage, grain and degree of toasting of the staves (slats that form the barrel) are chosen. The barrel park is completely renovated every 3 years.
Quality
In this vineyard, 2.5 kg of grapes are produced per vineyard, which is equivalent to one bottle per plant. To obtain this quantity of grapes, but of the highest quality, pruning and thinning (elimination of clusters) are carried out, selecting the best clusters for wine production. A great variety of fruit trees are planted among the vineyards, both to break with monoculture and by tradition, since in the case of quinces, in the past they were placed near the roads that surrounded the crops so that travelers could settle for their fruits and they will not enter the fields and deplete the production.
The vintage
At Bodegas Luis Pérez, for the harvest (harvest) we wait for the appropriate time, depending on the variety and age, within each variety. The harvest is carried out in these lands between 1:00 a.m. and 1:00 p.m., to avoid the midday heat that can cause the grapes to break due to excessive expansion. When the grapes are broken, in addition to oxidizing the juice, it can become contaminated with other undesirable yeasts found in the clusters. In some varieties, the harvest begins the last week of August, although generally this will depend on the weather that year. that affects maturation.
Recovery of the broken tintilla
Since then, Bodegas Luis Pérez has been growing and consolidating its project, based on respect for the terroir, the recovery of native varieties such as tintilla de rota and palomino Fino, and the application of innovative techniques such as microoxygenation or aging in French oak barrels.
