The history of the Primitivo Collantes S.A. winery It dates back to the 19th century, with the arrival of the Primitivo and Tomás Collantes brothers in Chiclana de la Frontera, from the Iguña Valley, in Santander.
A few years later they acquire a piece of the winery on Calle Ancha, No. 51 of this town, currently their headquarters. This winery is popularly known as "Bodega El Gallo".
Later, the hard work leads to the expansion of the business, through the acquisition of a site where the Bodega de Crianza of these excellent wines is currently located.
The Promitivo Collantes winery, located in Chiclana de la Frontera, was established as a Regular Collective Society in 1946.
In 1973 it became a Public Limited Company, adapting its statutes to the regulations in force in the year 1992, currently it operates under the corporate name Primitivo Collantes, S.A.
Both the Elaboration Winery and the Production Winery, where their wines are raised and aged, are registered in the Regulatory Council of the Jerez - Xeres - Sherry Denomination of Origin.
The winery also makes and ages wine vinegars, also with the Jerez - Xeres - Sherry Denomination of Origin.
Our wineries are located in strategic places that facilitate the circulation of air currents from the south and west wind coming from the Atlantic Ocean, providing a cool and humid environment, also darkened to avoid the effect of the sun and taking advantage of the night breezes loaded with humidity. , essential for the development of yeast.
The Company Primitivo Collantes, S.A. owns the Pozo Galván (17.30 has.), Matlián (19.53 has.) and El Inglés (18.31 has.) vineyards, in the municipality of Chiclana de la Frontera. They belong to the Production Area of the Denomination of Origin of Jerez wine.
The antiquity of the cultivation of the vine in these payments is similar to that of other famous payments of the Denomination of Origin of Jerez - Xeres - Sherry. As a consequence of the historical evolution of these wines, always linked to those of Jerez de la Frontera, Sanlúcar de Barrameda or El Puerto de Santa María, the term Chiclana de la Frontera was included in the designation of origin of Jerez wine. , both for historical and technical reasons.
As in the entire province, Chiclana enjoys a warm southern climate, bathed by the maritime environment from the Atlantic Ocean, which makes it the ideal place for aging "veil of flower" wine, essential for the organoleptic characteristics of our wines. wines that make them light, fragrant, with a clean taste and slightly bitter.
These vineyards of albariza are very traditional and very old as producers of the highest quality grapes in the Chiclana area. The main characteristic is its high moisture retention power, storing the rain that falls in winter to nourish the vine in the dry months.
Aging is the final stage of making our wines. The so-called biological aging (veil of flower) begins, through the Crianza and Soleras system, until the organoleptic characteristics and analytical indices that define our exquisite wines are achieved.
