What are still wines?

Just as you are reading it, in fact, you have surely drunk a few still wines without knowing it, or maybe you are an expert on the subject; either way, good information is never too much, and even less so about that great companion: the delicious wine.

We usually associate wine with adjectives such as: light, fruity, intense, but it is not very common that we relate it with the word still wine. Still wine? Although it may sound strange to you, yes, these types of wines do exist, they are the result of a specific manufacturing process.

Still wines" are those obtained from the natural alcoholic fermentation of grape juice or must, the fermentation process must occur naturally as a result of the action of the yeasts that convert the must into wine; therefore the production of this type of wine does not cause large amounts of carbon dioxide gas.

As they have a low presence of carbonic gases, these wines do not have bubbles. In addition, they have an alcohol percentage ranging from 8.5% to 14%. Interestingly, most of these wines are still.

But before we continue telling you how still wines are classified and their manufacturing process, you should know where you can find the best ones in Spain.

Of course, we are referring to Seville, capital of Andalusia, that Spanish region with great cultural, scenic and gastronomic diversity; renowned for its wine regions.

These, depending on the presence of sugar in the wine, can be classified as follows:

  1. Dry wines: have less than 5 grams of sugar per liter, they are the least sweet still wines.
  2. Semi-dry wines: have between 5 and 30 grams of sugar per liter of wine.
  3. Semi-sweet wines: those containing between 30 and 50 grams of sugar per liter of wine.
  4. Sweet wines: contain more than 50 grams of sugar per liter of wine, so diabetics should abstain.

Still wines are those that are usually consumed as table wines; those that are not sparkling, semi-sparkling or liqueur wines can be classified within this group.

We can classify them by their color:

  • Whites

  • Rosés

  • Reds

  • Orange Wine or Orange

Preparation of still wines:

White still wine: it can be white, the result of fermenting the must without the skins. When the must is fermented with the skins, the result is an Orange Wine.

Rosé still wine:

It is made in a similar way to white wines, but before fermenting the must, the must is kept for a few hours in contact with the grape skins to obtain the desired color.

Red still wine:

the must is fermented together with the skins looking for polyphenols (organic compounds that give the wine its color, texture and astringency) tannins (compounds that accumulate in the fruit and bark of trees and that have a very peculiar smell).
