This wine comes from the ‘Palomino’ variety, obtained by gentle pressure and subjected to complete fermentation. It’s 15% alcohol volume obtained by biological aging must be undertaken in full in wineries located in Sanlúcar de Barrameda.
Subsequently, the wine will go to the “solera of manzanilla” for breeding under the “velo de flor” for 4-5 years and then to the solera of manzanilla pasada until completing its 10 years of biological aging under the system of criaderas and soleras.
Being a product called “pasada en rama” combines two attributes, one of them the freshness of a product twinned with his barrel and a finesse and elegance of its pre-oxidative balance.
The very special microclimate of our winery located at the mouth of the Guadalquivir River, provides the development of the ‘velo de flor’ which provides its peculiar organoleptic characteristics. This biological aging continues for a period of three to four years in American oak barrels using the traditional ‘criaderas’ and solera system.
Xixarito is a “manzanilla pasada” and “en rama”, that is to say it has all the roundness of a manzanilla pasada with the purity that has not passed through any filter (en rama). The beauty of the south in its pure state.
Pairing: Mojama, anchovies in vinegar, cod, cold soups (ajo blanco and salmorejo),cured meats and shushi,
You can tell this while serving: Xixarito was as it was known to Jose Rodriguez Jiménez, who in 1984 buys the winery and creates the bases of what today is Bodegas Barón.
Xixarito is also the name of one of the best soleras of the winery. Formerly called San José and has up to seven years old, it is a real treasure inside the cellar.
With a glass of this wine you understand many things about a pleasant, quiet life, not to take things with much stress, which is not necessary, you have to learn to enjoy. In addition, you have fun with a unique label, a funny tag that lets you talk because there is nothing similar throughout the Frame. Surely Xixarito will be proud of what his children have done.
