This cellar is situated in Constatina, a town which is located in Parque Natural de la Sierra Norte de Sevilla. It is an old ruined winery until 1995, the year in which Raul's father bought the farm and began its adaptation and preparation of the land, removing part of the olive trees that were there and in 1998 began to plant the first strains which today occupy 8 hectares of the 32 existing. Four years later they began to make grape juice, although Raúl (who has a degree in Labour Sciences) wanted to progress and to go further and was until obtaining a production of quality red wine. For this, he bought American, French and Hungarian oak barrels. He said to me: "For me it is fundamental the land in which the vineyard is raised, but also that the wood in which mature then is of quality and contribution to the wine".

Centennial Tradition

The farm was originally olive trees, in 1998 they planted the first vines, which today occupy almost eight hectares, of the farm. Raúl bought American, French and Hungarian oak barrels, in order to make quality red wine and stop making must. For a few years at Bodega la Margarita, they have carried out night harvesting, an ancient custom that allows the grape to retain all its properties, since it does not break the cold chain and the process is more natural, as the temperature drops during the night.
