The Cueva La Sima white wine is made by Bodegas La Margarita with an exclusive production of just 600 bottles.
This is a white wine made with Chardonnay grapes (88%) and Airen (12%) grapes; an unusual combination. But perhaps its most original feature is that this white wine is aged for nine months in chestnut wood barrels, made from the vineyard’s own trees, and is then rested in clay amphorae.
Cueva La Sima appears in the glass as a clean and bright wine, with a surprising pink gold tone. On the nose we can appreciate notes of plant species typical of the region with some nuance of nuts, such as a traditional stew with almond thistle, all tinged with memories of lees and toasted ageing. One the palate it is dry with good acidity and body. The taste is sensual and elegant, with a good persistence that leaves slight mineral notes.
Share this when serving the wine: The Cave of Sima, located near the old town of Constantina (where the winery is located in the northern Sierra of Seville), is an ancient drain that collected runoff water and inside which circulated a course of permanent water, responsible for the erosion of the rock and the expansion of fissures and cracks to form galleries.
In the cave of La Sima remains have been found associated with a burial dated around 2,500 BC, as well as the skeleton of a wild bull from 72,500 BC.
