The excellence of this Oloroso Viejo El Maestro Sierra lies essentially in its old age and in the organoleptic qualities it acquires thanks to it. In other words, it is a generous man with a certified old age of more than 30 years, a certification that is accredited both through the tests carried out with Carbon 14 and later by the Tasting Committee.
The range of Old Wines from Bodegas El Maestro Sierra is undoubtedly one of the oldest ranges that we can find on the market today. This Oloroso 1/14 whose name means that only 14 casks make up the solera of this wine and from which barely a few bottles are taken a year, is certified as VORS, that is, Very Old Rare Sherry, with an age of more than 30 years, although easily over fifty. It is pure concentration, oxidation, complexity, Jerez in its purest form.
This wine is the result of a prolonged oxidative aging for more than 50 years of a fine Palomino odorous that during all that time and due to the loss and evaporation of water, causes an extreme concentration of the wine, with the consequent increase in the alcoholic degree. and the acetaldehyde content that makes it drier and more saline. Production more than limited to just 300 bottles per year.
To the senses: dry, tasty, persistent, elegant.
For El Maestro it harmonizes with ... a marine sunset.
