10RF by Osborne, is an Oloroso of the Medium type, that is, a generous liquor wine obtained by mixing or nodding between a dry Oloroso and a small amount of Pedro Ximénez wine that gives it that incredible sweetness and flavor of raisins but maintaining the fineness of a good scent.
PREPARATION AND AGING
Soil: Albariza type, with great capacity for absorbing water and a predominantly limestone composition, a type of soil that favors good root penetration to obtain the most diverse substrates, which are later transmitted to the wine.
Climate: Temperate climate, hot in summer and with a notable influence from the nearby Atlantic Ocean, both by the west winds in summer, and by the frequent morning dews, which are a moderate but continuous supply of water for the plant.
Elaboration: Pedro Ximénez grapes are dried in the sun and then undergo gentle pressing, followed by fermentation at a controlled temperature of 24ºC. Once alcoholic 11-12º are reached, it is topped with liquor until it reaches 19º of alcohol. Once fortified, the fortified wine is transferred to 500-liter American oak casks, where it is aged through the unique soleras system. The special microclimate of El Puerto de Santa María, where our winery is located, favors oxidative aging in a gentle way, giving this wine its wonderful personality.
Once both wines have been made separately, the Palomino Oloroso through oxidative aging and the Pedro Ximénez through the sunning of the grapes and subsequent aging, the moment of mixing or pitching arrives in which approximately between 15% and 20% is of the latter, always with the aim of reaching a resulting residual sugar quantity that does not exceed 115 g / L to be classified as Medium.
