Osborne Sherry Wines: Osborne 10RF
It is a Medium-type oloroso, that is, a generous liqueur wine obtained by mixing or shaking a dry oloroso and a small amount of Pedro Ximénez wine that gives it that incredible sweetness and raisin flavor but maintaining the fineness of a good oloroso.
PRODUCTION AND AGEING
-
Soil: Albariza type, with a great capacity for water absorption and a predominantly organic composition. Limestone, a type of soil that favours good root penetration to obtain a wide variety of substrates, which are then passed on to the wine.
-
Climate: Temperate climate, hot in summer and with a notable influence from the nearby Atlantic Ocean, both due to the westerly winds in summer and the frequent morning dew, which is a moderate but continuous supply of water for the plant.
-
Production: The Pedro Ximénez grapes are dried in the sun and then undergo a gentle pressing, followed by a fermentation at a controlled temperature of 24ºC. Once the 11-12% alcohol content is reached, it is fortified with liquor until reaching 19% alcohol content. The fortified wine, once fortified, is transferred to 500-litre American oak casks, where it ages through the unique solera system. The special microclimate of El Puerto de Santa María, where our winery is located, favors the oxidative aging in a gentle way, giving its wonderful personality to this wine.
Once both wines have been made separately, the oloroso de palomino through oxidative aging and the Pedro Ximénez through sunning the grapes and subsequent aging, the time comes for the blend or topping in which approximately between 15% and 20% is the latter, always with the aim of reaching a quantity of resulting residual sugar that does not exceed 115 g/L so that it can be classified as Medium.
