Bodegas Barbadillo, in Sanlúcar de Barrameda, jump on the bandwagon of the growing Vinos de la Tierra de Cádiz market by adding to their already well-known Gibalbin wine, a new pair of red wines recently presented under the Quadis brand. In this case, it is a crianza wine, made with a blend of up to four varieties planted in its vineyards in the Sierra de Gibalbin that give rise to a wine with an intense dark color, very aromatic and full-bodied. A strong bet of the winery for the red wines of Cádiz where Barbadillo has a lot to say.
Separate vinification of the different varieties according to their state of maturity, it proceeds to a cold pre-fermentation maceration, at a temperature of 5ºC for 3 days. Alcoholic fermentation takes place in 35,000-liter stainless steel tanks at a controlled T of 25º for about 7 days with selected yeasts for each variety. Malolactic fermentation and aging for 11 months in French and American oak barrels for two / three years.
Pairings: Traditional stews, grilled meats, Iberian meat, game and cured cheeses.
Tasting notes: Deep cherry color, dark. It is seductive due to its deep ruby red color, almost black, with a high layer. On the nose it captivates due to its aromas of ripe red fruit integrated with wood, with light notes of vanilla and liquorice. On the palate it surprises with its smooth, sweet and wide entry of soft tannins and good persistence.
