Garum

Elaboration

The Garum Wine is a Andalusian red wine. The grapes of this wine, belonging to the wines of Cádiz are Merlot 60%, Syrah 30% and Petit Verdot10%. Its harvest is manual, in boxes of about 10-15kg.

Each Garum wine grape variety is produced in separate stainless steel tanks. Pre-fermentation maceration and subsequent 20-day fermentation. Once the fermentation is finished, the varieties are mixed and aged in American and French oak barrels for 12 months.

Features

The color of Garum vino is maroon. On the nose it is an intense wine with hints of red fruit, licorice, coffee and cocoa. It is characterized by a sweet tannin that makes it silky but powerful, with a toasted and coffee aftertaste.

The family that owns the winery wanted to find an original way to illustrate their first wine. One of the daughters had the idea of uniting the two family passions, wine and dogs, specifically the Jack Russell breed. The family owns nine dogs of this Australian breed. The Jack Russell, like another member of the family, was reflected in the winery's logo and in two of its wines, Samaruco and Petit Verdot. In the latter, the dog winks at him Little Prince, the novel by Antoine de Saint-Exupéry. The winery produces between 3,500 and 5,000 kg of grapes per hectare. To control production, cluster thinning is carried out.
