Garum wine is a red wine from Cadiz. Its grapes are Merlot 60%, Syrah 30% and Petit Verdot 10%. Its harvest is manual, in boxes of about 10-15kg.
Each variety is made separately in stainless steel tanks. A pre-fermentation maceration is carried out and fermentation is carried out at controlled temperature, whereby the maceration lasts for 20 days. After these processes of malo-lactic fermentation the varieties are mixed and the wines are aged for 12 months in American oak and French oak barrels plus half with 2 years of use. During the relevant process, wine is not filtered or clarified and is ready to drink when bottled.
Mainly, it is characterized by a garnet coloured medium-high colour, for sweet tannin that makes it silky but powerful, a toasted and brownish aftertaste.
The smell is intense and frank, with souvenirs to understory, ripe red fruit, spices, liquorice, coffee and cocoa.
