This Jerez, the perfect conjunction between Oloroso and Pedro Ximenez, has aged in our Sanlúcar de Barrameda wineries. The result of more than five years of aging, it is formed by the conjunction of two grape varieties: Pedro Ximènez and Palomino Fina. The Cream is a generous liqueur wine, a mixture of an oloroso and a Pedro Ximénez. Thus, with two good ingredients> strong> Bodegas Barbadillo makes this fantastic Eva Cream, an odorous sweet, very aromatic that is the perfect mid-morning or mid-afternoon aperitif, for example, with simple toasted almonds.
Eva Cream is made by mixing or capping a dry odoriferous of about 5 years of oxidative aging with approximately 20% Pedro Ximénez wine, so that it reaches a residual sugar content of about 120 g / L. Finally, it is introduced into the Eva Cream solera for its assembly and aging for about six more years.
Pairings: Fatty dishes, such as suckling pig, or spiced with curry, blue cheeses.
Tasting note: Mahogany in color with orange tones, the unctuousness of Pedro Ximénez is appreciated in the glass, it is a wine with a somewhat dense appearance, with abundant tears adhering to the glass. On the nose it is a combination of notes of dried fruit, toasted notes, walnut, from the oloroso, with the notes of prunes, coffee, cocoa, very harmonized and balanced. In the mouth again, the unctuousness of Pedro Ximénez is present, it is sweet, very smooth, velvety, and envelops the mouth. Very long in the end.
