Amontillado wine that comes from the complete fermentation of fine palomino grape musts. Its minimum age is 10 years and its alcoholic content is between 16 and 22% VOL.


Amontillado Fossi is a young Amontillado produced by Bodegas Primitivo Collantes in the town of Chiclana de la Frontera, within the Production Area of ​​the Jerez Denomination of Origin. The Palomino Fino grapes planted on albariza soils come from Viña Matalián, a 40-hectare vineyard on the outskirts of Chiclana, well divided by sectors according to the characteristics of the soil. Amontillado Fossi is a very good Amontillado with approximately 15 years of aging by the soleras and criaderas system, with a fine and delicate character, and with an excellent quality-price ratio.

Amontillado, which is made from the top of a fine wine at 17% -18% by volume using wine alcohol, after a first stage of about five years of biological aging under a veil of flower. It is then when it passes to the hearth of Amontillado for another 10 years or so. Finally, it is slightly filtered and bottled for distribution.

Pairings: Tuna with onion, pickled and pickled appetizers, cured cheeses.
Tasting notes: Light amber color, good tears. On the nose it is intense, with notes of dried fruit, fine wood, light sweet touches of candied fruit, and a certain salty and limestone sensation. On the palate it is light, with freshness, good mid-palate and long persistence.
