Amontillado Fossi Wine
Amontillado Fossi is a young amontillado wine produced by Bodegas Primitivo Collantes in the town of Chiclana de la Frontera, within the Production Zone of the Jerez Designation of Origin. The Palomino Fino grapes planted on albariza soils come from the Matalian Vineyard, a vineyard on the outskirts of Chiclana, of about 40 hectares, well parceled into sectors according to the characteristics of the soil.
The Amontillado Fossi wine is a very good amontillado with approximately 15 years of aging using the solera and criaderas system, with a fine and delicate character, and with an excellent quality-price ratio.
Production Process
Amontillado Wine that is made by fortifying a fine wine 17%-18% by volume using wine alcohol, after an initial stage of about five years of biological aging under a veil of yeast. It is then transferred to the amontillado solera for another approximately 10 years. Finally, it is lightly filtered and bottled for distribution.
Pairings
Tuna with onions, pickled and marinated appetizers, aged cheeses.
Tasting Notes
Light amber color, good tears. On the nose it is intense, with notes of nuts, fine wood, light sweet touches of candied fruit, and a certain saline and limestone sensation. On the palate it is light, with freshness, good mouthfeel and long persistence.
