Hacienda Parrilla Alta Tinto is the youngest red wine made at Hacienda Parrilla Alta in the town of San José del Valle (Cádiz). A young red, made with a successful blend of the varieties grown there: Syrah, Petit Verdot and Tintilla de Rota, with the advice of Ramiro Ibáñez. A fresh wine, with a slight barrel aging that softens it and makes it very pleasant to drink in summer, for example.
Manual harvest of the Syrah, Petit Verdot and Tintilla varieties, with very low production. Slight maceration prior to fermentation for 5 days. Fermentation in stainless steel tanks at 25ºC for 8 days. Once the fermentation was finished, it was put into barrels to carry out the malolactic fermentation in wood. Subsequent aging for 4 months in French oak.
Pairings: Appetizers, grilled meats, cutlets, meat stews, soft cheeses?
Tasting notes: Intense red color, almost opaque, with purple edges. Very intense nose, with fresh notes of red fruit, plums, strawberries, balsamic notes, mint, and spearmint. On the palate it is fresh, light, round and very balanced.
